SHERRY VINEGAR

	Ageing takes place in wooden casks and can range from six months to two years.
	It has an intense amber colour with touches of mahogany.
	Its acetic aroma contains hints of nuts and wood, from have been aged in wooden barrels.
	Ideal for dressing all kinds of dishes, for pickling or for preparing sauces and reductions.

ANALYTICAL PARAMETRES

Residual alcohol: < 3% by volume

Total acidity, expressed as acetic acid: > 70 g/l

Dry extract: minimum 1.3 g/l and acetic degree

Ash content: between 2-7 g/l

	The ageing period of Reserva Sherry Vinegar can range from 2-10 years.
	Its mahogany colour has bright amber-hued reflections.
	Noted for its unmistakeable and potent aroma, with expressive nuances of vanilla, nuts and vinified wood. On the palate, it dry acidity is a just another reminder of its origin, Sherry Wine.
	The perfect addition to cold soups like gazpacho, ajoblanco or for use in marinades.

	Only vinegar aged for more than 10 years can carry this distinctive label granted by the Regulatory Council.
	It has a deep mahogany colour and a silky texture.
	With a particularly intense aroma and acidity, Gran Reserva Sherry Vinegar carries notes of aged wine, clearly owing to its prolonged ageing in American oak barrels. This is what confers it a fully rounded, dry and balanced flavour and long-lasting aftertaste, full of notes of nuts and spices.
	Its aromatic complexity will bring out the flavour of salmorejo, oven-roasted vegetables or even a salad.

	Six months is the minimum period of ageing equired by the Regulatory Council.
	With a deep, dark mahogany colour that accentuates its body and density, this semi-sweet vinegar owes its unique character to the wine from which it takes its name.
	Its sharp aroma evokes raisined fruit, roasted aromas or liquorice. Its sweetness on the palate is perhaps its best defining quality, together with its silky smooth flavour.
	Perfect for meat dishes, cheese-based salads and for elaborating desserts.

	This type of vinegar is aged for a minimum of 6 months.
	Of a uniquely vibrant mahogany colour, this vinegar is made from semi-sweet Moscatel wine.
	Its aroma gives away its origin—the Muscat grape variety, which blends with the fresh essence of raisined fruit. On the palate, it stands out for its notable sweetness, natural mouthfeel and silky smoothness.
	Ideal with salads and marinades, particularly with citrus fruits.
